Bran Muffins

These bran muffins (adapted from a recipe by Alison Holst) are super filling – a great snack when you are trying to control your weight. Enjoy these muffins with a cup of tea but don’t expect to absorb any iron – both bran and tea bind iron and reduce its absorption. If you are concerned about iron, keep these for in between meals. I like to use up any over-ripe bananas in this recipe. Mash 1 or 2 and throw them in!

2 cups wheat bran
1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup honey or golden syrup
1 egg
1 cup reduced fat milk
Mix bran, flour, baking powder and baking soda in a large bowl. Melt honey or golden syrup in a pot or microwave. Beat in milk and egg. Pour wet ingredients into dry ingredients and stir until just mixed.
Place spoonfuls into well greased muffin tins. Bake at 200C for 10-15 minutes.
