Swiss Muesli – super healthy, yummy and so easy to make!

swiss meusliYoghurt, oats, nuts – do you find it hard to eat these super-health foods? Tired of porridge for breakfast? Husband hates yoghurt? Here’s one solution – Swiss muesli. It tastes delicious and is so easy to make. The amounts are just a guideline. You can use more or less of each ingredient to get the taste and texture you like best.

2 cups rolled oats

1 cup apple juice

1 cup water

1 apple, chopped (leave skin on)

1/2 cup almonds, chopped

1/3 cup raisins, currants or sultanas

3-4 generous tablespoons low fat natural yoghurt

Place rolled oats in a dish. Add apple juice and water. Cover and refrigerate overnight. In the morning, stir through apple, almonds, raisins and yoghurt. Serve with strawberries or your favourite fruit.

Swiss muesli has lots of soluble fibre from the oats, apple and almonds which helps bind cholesterol and keep blood sugar levels steady. The oats and almonds provide essential fats that our body needs but can’t make itself. These help keep our skin, hair and nails healthy as well as having anti-inflammatory effects. Yoghurt is fantastic for gut health and calcium. Make sure you check the date and eat it as fresh as possible because the ‘good’ bacteria die off over time.

I could eat this for breakfast, lunch and dinner – and sometimes do! It’s great to eat in the afternoon – just before the cake/biscuit/cheese and cracker urge kicks in. A bowl of Swiss Muesli knocks out all desire for those naughty nibbles. Go on – give it a go!

Good old chefs! They love a splash of cream here and there to make food taste extra good. But all us nutritionists think of is the 40% mostly saturated fat and what it does to our cholesterol and weight!!
